let me introduce myself…
I used to hate writing ‘about me’s until I realized the best ones are written from the heart.
So hi.
I’m Jennifer.
I’ve stopped feeling ‘extra’ for telling people I’m vegan.
I also don’t eat gluten.
If you found my website, you’re most likely here because you live the vegan/gluten free struggle. HOW MANY TIMES HAVE YOU WONDERED “WHY IS EVERYTHING EITHER VEGAN OR GLUTEN FREE?!” HOW MANY TIMES HAVE YOU LAMENTED “WHY CAN’T WE HAVE BOTH?!” AMIRITE?!?!
Friends, I’m here to make your life easier because I believe this doesn’t have to be hard. Options not only ARE out there, BUT they are becoming more and more prevalent as an increasing number of people begin to really, truly pay attention to what they’re using to nourish their bodies. And by being a part of my community, you’re helping to demonstrate there’s a growing movement for healthier options.
I don’t think I can give credit for this whole thing to anyone other than Jesus because it’s truly through His divine inspiration that I got not only the idea to do this but also the motivation. Honestly, there wasn’t One Defining Moment that gave me the idea to start this blog - I just happened to be standing at my bathroom sink the Saturday before Easter 2025 and the inspiration for this just came over me. That’s the only way I can describe it. And suddenly, all these thoughts and ideas and ‘I wish we could/had’s came flooding in and bam. I made sure the social handles were available and bought a domain name.
But why am I so excited about what I’m doing? Because I love to travel. I love to get out and see all sorts of cool things around my beautiful country, the USA, and I love to live my values. I can’t tell you how many times I’ve researched my travel destination beforehand and thought man I wish I could find a resource to just make things easier and distill all the information I need to know… until I realized - I can be the resource. “The change I wish to see.” My dance teacher constantly reminds me - if you want it to look different, it has to feel different. So if I want the vegan/gluten free travel scene to look different, I have to make it different.
My Goals:
To highlight and advocate for the availability of food options that are both vegan + gluten-free
To help spread the word about amazing vegan + gluten-free food options in hopes that more places will get on board with compassionate and healthy eating.
My Ethics & Values:
Integrity & Transparency: Please understand I will be very clear about when I have been paid to provide a review or try a product. My review will always be honest and truthful. I do not promise a review will be all sunshine and rainbows, but I do promise that it will be positively framed - no one’s here for negativity, especially me. For example - If I’m offered a dish heavy on cilantro I’m gonna straight up tell you - “I am one of those people for whom cilantro tastes like soap so I wasn’t super vibing with this entree BUT for those of you who can’t get enough cilantro, this dish is absolutely for you!!” Rather than “I hate cilantro, this shit was nasty.” See the difference? It’s possible to be honest without being hateful.
One VERY IMPORTANT thing to note is that although I do avoid gluten whenever possible, I don’t do this because of a medical issue. I am very blessed in that regard because my options are already limited enough! So please know that if you do not eat gluten due to a medical issue, I have not ‘tested’ these businesses for their safety standards. I will, however, be happy to note when they do list additional information about allergy precautions they take.
I know what resources and information I wish I had access to and thus am creating, but I’m always curious to know - what stuff do YOU want to see?? If you have any thoughts, suggestions, or recommendations, don’t hesitate to drop me a line via the contact me part of my website or through email at beautyindiscovering@gmail.com. You can also find me on Instagram @beautyindiscovering.com.
Airports. Hotels. Restaurants. Resorts. Theme Parks. Wherever we end up, let’s go out there to live compassionately and consciously together!!
Bon Appetit,
Jennifer <3
